Padron peppers are our favorite. We try to grow them every year. When they are young like this we like to stir fry them with a little bit of olive oil and kosher salt. We eat them whole, seeds and all. Padron peppers are usually mild but every now and then you will get the not unpleasant surprise of biting into one with a little heat. These often don’t even make it to the table. We have been known to stand at the stove, grabbing them by the stem and eating right out of the hot pan until they are gone. I am told Padron peppers prepared this way are a popular bar snack in Spain.
