Found a tasty way to use Padron peppers. This turns eggs into a finger food. Just grab one of these egg bites by the stem, pop it into your mouth and pull off the stem.
I beat two eggs with a little yogurt and salt, poured a little into each well of a mini muffin pan, slid in whole pardon peppers with the stems sticking out, put a little grated Dubliner cheese on top and sprinkled with bread crumbs. Baked these in a 350ºF (175ºC) oven for about 10 minutes, switching to broil for the last few minutes to brown them on top.
