I generally stick to a healthful diet which avoids refined sugar but occasionally includes scant amounts, so today’s project is kind of an anomaly for me.
I tried making a version of this a few years ago with less than perfect results. It had a burnt flavor and was more sticky than it was brittle. I made some adjustments today, and I couldn’t be happier with the results.
It started by microwaving MorningStar Farms® bacon strips (smoked veggie bacon) a minute at a time, turning until crispy. It was about two minutes for me. The product is not egg or gluten free so you will want to read the ingredients to know if it fits in with your diet plan. I used a dozen of the strips, microwaving six at a time. When they were brittle I crushed them in my hands.
In a sauce pan I put:
1 1/2 cups sugar
1/4 cup light corn syrup
1/2 cup water
2 tablespoons maple syrup
pinch of salt
I heated this on medium heat, stirring until sugar was dissolved, then continued boiling, stirring occasionally, until it reached 300ºF (149C).
The next few steps occurred too rapidly to photograph each one. When the syrup reached 300ºF I turned off the heat, mixed in the crumbled “bacon” and 1 teaspoon of baking powder. I immediately poured the mixture into a buttered 9 inch by 13 inch tray and let it cool.
This stuff is wonderful! I will need to exercise much self control to not overindulge.
