Squashed New Potatoes With Spinach, Pizza Sauce & Cheese

I set out to create a healthy dish but it turned out to be anything but. Only the inclusion of bacon could have made it more decadent. I am vegetarian so there was no fear of that happening.

I boiled some baby new potatoes and slightly squashed them. I used a masher that makes me smile every time I use it because of the great memories it brings to mind. ­čÖé


I basted them all over with butter seasoned with salt, powdered rosemary, red chili flakes, onion powder, garlic powder and dried dill weed. I placed them in a nonstick muffin pan.

On top of the potatoes I put a generous portion of cooked spinach, a little pizza sauce and shredded Asiago and Colby cheeses.

I baked these in a 400┬║F oven for 10 minutes. After dishing these fat bombs onto serving plates there was enough butter and grease left in the muffin tin to bring on another heart attack or two. Don’t misunderstand me, these tasted great! To make these more healthful the butter could have been eliminated and the seasonings sprinkled directly on the potato, perhaps with a bit of cooking spray to help them stick. I suppose one could also be a little more judicious in the use of cheese, as difficult as that is! Doesn’t the generous portion of spinach counteract the deleterious effect of the abundance of fat?… Doesn’t it???!!!…
