A Little Bit Of Everything Black Bean Salad

I have a couple avocados that need to be eaten and since black bean salad goes hand in hand with avocado, that’s what I set about making.  Well, I kept adding a little bit of this and a little bit of that until there was much more salad than the two of us could eat even without the avocado. Not sure I can remember everything that went into this salad, but I will try:

sweet onion – finely chopped

sweet red pepper – finely chopped

jalapeño – finely chopped

cilantro – finely chopped

purslane leaves – whole

celery leaves – finely chopped

black beans

corn

tomatoes – skinned, seeded and chopped

green olives – sliced

cheddar cheese – cubed

Manchego cheese – cubed

cumin powder – a light dusting

black bean salad

I enjoyed my salad with homemade fermented jalapeño hot sauce, sour cream and corn chips. I’m not surprised there is enough left over for another meal.
