Had to include some garlic chive blossoms in at least one dish before mowing them down. I think I hit on as good a way as any to use them.
I mixed cooked spinach, shredded Manchego and cheddar cheese and bread crumbs with a couple of eggs. There was no need to add salt since the Manchego is salty enough.
I sprayed a nonstick mini muffin pan with no-stick cooking spray and set the oven temperature to 375ºF. I spooned a little of the egg mixture into the depressions and stuck in inverted garlic chives flower heads with the stems sticking up. I then added more of the egg mixture and even more shredded cheese on top.
I baked these in a 375ºF oven for about 11 minutes. They easily lifted out of the mini muffin pan by the flower stems. These Cheesy Spinach Egg Bites were delicious with a very mild garlic flavor.
