Quick Bread Made With Plums & Winter Squash

I bought some good looking plums the other day but was very disappointed when I ate one. They were very dry and didn’t have much flavor. I hate for food to go to waste so decided to use some in a quick bread along with Hubbard squash.

The plums were so firm and dry that I was actually able to grate them. I also grated the Hubbard squash. Other ingredients were: dried cranberries, dates, brown sugar, walnuts, egg and butter. I completed the batter by adding baking soda, baking powder, whole wheat flour and all purpose flour.

Now to find a way to use the rest of the dry flavorless plums.
