Thought I’d play around with some fillo dough. I brushed the sheets with coconut oil and used cooked spinach with onion and garlic for a filling along with crumbled blue cheese and toasted pine nuts. I rolled it up and baked it at 350ºF for about an hour, then put a little prosciutto on one end for Faye and baked it awhile longer.
I’m not showing many photos because, having never used fillo dough before, the process was not at all pretty. The final product wasn’t so pretty either but it did taste good.
