My stinging nettle patch, which died back this summer, is getting its second wind. I cooked some along with Swiss chard and beet greens from the garden.
While the greens were cooking I put together the ingredients to make patties:
shredded Blue Hubbard Squash
quick cooking rolled oats
flattened rice (poha)
flax seed meal
The egg and shredded squash provided plenty of moisture to form patties. The patties held together very well so the egg probably wouldn’t be necessary if one prefers to keep it vegan, but a little water or other liquid would be needed if eliminating the egg. The patties were pan fried with a little canola oil.
