I like breakfasts on weekends to be a little different from the “usual.” This morning it was eggs poached in a mushroom spinach gravy on toasted whole grain waffles.
I sautéd onion, jalapeño and mushrooms to which I added flour, homemade “beef style seasoning” and water to make a gravy. (Since publishing the post about the seasoning I have added powdered soy sauce to the mix).
I then added spinach, baby bok choy and baby kale into the mushroom gravy and cracked two eggs on top. I put a lid on the pan and turned the heat down as low as it would go.
The poached eggs in spinach mushroom gravy were served on toasted whole grain waffles.
