I am a recent convert to goat cheese. I used to not go near the stuff. It’s still not my favorite cheese but I like it for a change every now and then. Today I used it in a sauce with mushrooms.
I sautéed onion, jalapeño and celery until softened, then added in sliced mushrooms.
When the mushrooms were about cooked I mixed in thyme, powdered rosemary and flour.
I then added milk, goat cheese, salt and pepper, mixing every few minutes until hot and thickened.
We enjoyed this mushroom goat cheese sauce over eggs this morning.
