The omelet this morning was a near disaster but it sure was tasty. I added too much Greek yogurt for the amount of eggs and when it came time to flip the omelet it obviously wasn’t going to slide out of the pan without breaking up. Instead of putting it in the oven to finish cooking I used the flame of a torch. I then scattered chopped Brie on top and torched it some more to melt the cheese.
The omelet was so tender I wasn’t sure I would be able to fold it without it falling apart. Avocado was the perfect topping for this omelet because its mild flavor didn’t detract from the subtle flavor of Brie. It wasn’t the prettiest omelet I ever made but it was one of the tastiest.
