Rice, Greens & Egg Breakfast

Faye fixed a tasty Mexican rice dish yesterday and I used some of the leftovers for breakfast this morning. I arranged a ring of rice around the perimeter of a lidded baking dish and in the middle I fashioned a nest of cooked and well drained beet greens seasoned with cumin and chili powder. In the middle of the greens I poured a beaten egg and cracked a whole egg on top of that. Shredded cheddar cheese was scattered over the entire dish and tomato sauce drizzled randomly on top. This was baked in a 350ºF oven until the egg had set.


 

It didn’t plate real pretty but it was delicious.
