Those who maintain and nurture a sourdough starter culture know that it is necessary to either use a portion of it, give some away or discard some of it from time to time. My jar of starter was getting full so I used some of it to make sourdough pancakes.
Early this morning I made a batter by adding whole wheat flour and water to about half cup of starter and leaving it out on the counter. When it was time to prepare breakfast I separated an egg and mixed the yolk with the batter. I beat the white until stiff and folded it in.
We enjoyed these sourdough pancakes with hot mango sauce and wild violet blossom syrup.
