Another Go At 100% Whole Wheat Sourdough Bread

My attempts at sourdough bread making are having increasingly better results. I have been loosely following the same basic recipe because it seems simpler than some of the others. I  started the baking in a cold oven set at 300ºF. After 30 minutes I raised the temperature to 325ºF and 15 minutes after that I raised the temperature again to 350ºF.
