Dates Stuffed With Goat Cheese & Pomegranate Molasses

I truly believe there is nothing new under the sun. Any time I thought I had come up with a unique ingredient or flavor combination I have subsequently learned that it had been done before and wasn’t new or unique at all. And that’s alright. It’s still fun to discover things that are new to me.

I recently experienced pomegranate molasses for the first time. I love the sweet but tangy taste. It occurred to me that the sweetness of a date would be complimented by the tanginess of pomegranate molasses along with the earthy flavor of goat cheese (which has a tanginess of its own) and balanced with the sweetness of coconut sugar.

I mixed pomegranate molasses with goat cheese and stuffed Medjool dates with it. Then I dusted the tops with coconut sugar. They tasted as good as anticipated.

Medjool dates are a large variety of date and more than a one bite portion. I noticed that the first bite caused the filling to squish out of the piece of date remaining in hand. I would therefore either use a smaller variety of date or make each portion just half a date so the entire serving can be popped into the mouth at once.
