Spinach, mushroom & Goat Cheese Omelet On Whole Wheat Sourdough Toast

Some days I sense my body begging me to feed it something green. Such was the case this morning. I used up what little fresh spinach we had left to make a spinach, mushroom and goat cheese omelet.


 

I enjoyed my portion on whole wheat sourdough toast spread with mayonnaise.
