Since I only eat two meals a day I frequently work vegetables into my breakfast menu. This morning I was craving something green so I cooked some frozen spinach in the microwave and mixed it with chopped onion, grated feta cheese, sourdough breadcrumbs and an egg. I also added small amounts of baking powder, baking soda, nutmeg and just a little salt since the feta is already quite salty.
I spooned the mixture into the depressions of my ebelskiver pan and cooked the spinach balls slowly at low heat. I carefully rolled them until all sides were cooked. Because they were so soft they had to be rolled a little at a time.
We enjoyed eating these feta/spinach balls with various dips: blue cheese dressing, datil pepper sauce, ketchup, Faye’s barbecue sauce and sour cream.
