Red Cabbage Slaw With Roasted Pepper Dressing

I put together a red cabbage slaw with a homemade dressing for lunch today. The ingredients for the dressing were:

  • deseeded and partially peeled roasted mini peppers (orange, yellow & red)
  • apple cider vinegar
  • a little sugar
  • chopped oil marinated sun-dried tomatoes including some of the oil
  • 1/4 of a small onion
  • salt
  • olive oil

I blended the first six ingredients until smooth and drizzled in the olive oil while blending.

Ingredients for the slaw were:

  • red cabbages
  • radish
  • carrots
  • onion
  • chopped dried cranberries (Ocean Spray® Craisins®)

This slaw, with the roasted pepper dressing mixed in, is the best I have ever tasted!

The salad was served with quartered grape tomatoes. I wanted a little extra dressing on mine.
