Faye cooked up some penne pasta yesterday but ended up not making the dish she was going to use it in. I thought I’d include some of it with breakfast this morning.
I sautéed onion in a skillet, added cooked penne pasta and seasoned with salt.
When the pasta was well heated I poured in eggs beaten with Greek yogurt.
When the scrambled eggs were cooked I turned off the heat and melted in a dab of clabbered truffle butter.
We enjoyed the scrambled eggs and pasta with a sprinkling of assorted shredded cheeses.
