Tomato Blossom Guacamole Salad

My menu choices are often guided by cravings. Fortunately I have trained my body (brain) to crave mostly healthy foods. When I haven’t had a lot of greens in awhile I get a strong craving for them to the point that I even find ways to work them into breakfast dishes.

The last couple days I’ve had an overwhelming craving for salad. We had salad yesterday for our main meal and I made salad again today.

Today’s salad was a tomato blossom filled with a guacamole salad on a bed of torn spinach, kale and romaine lettuce surrounded by a ring of sliced cucumber.

The guacamole salad consisted of:

  • avocado
  • sliced scallions
  • radish
  • minced jalapeño
  • cilantro
  • lime juice
  • salt



There was a little bit of the tofu burger patty mixture left, so I cooked it up in little balls to go in the salad.



This salad didn’t even require a dressing. Faye and I split this salad down the middle and it filled us both up.
