Breakfast Fugath

One of my favorite kinds of stir-fries is a fugath (foogath), whether it’s made with green beans,  cabbage or any other vegetable. For me, it’s the combined flavors of mustard seeds, curry leaves and coconut that really make the dish. The ingredients I used in this fugath were:

  • mustard seeds
  • dried red chilli
  • crushed dried curry leaves
  • white poppy seeds
  • red onion
  • garlic
  • red bell pepper
  • coconut
  • red cabbage
  • tomato
  • kosher salt
  • eggs



At the end of the cooking time I stirred in a couple beaten eggs to make this more of a breakfast dish. I could have kept this vegan by leaving out the eggs or by substituting tofu.
