I thought I’d take a break from the all too frequent egg dishes for breakfast and do a tofu scramble instead. I roughly mashed extra firm tofu in a hot greased skillet and added chicken style seasoning.
I then added chopped onion, minced garlic, chopped celery and minced green chili.
After it had cooked a couple minutes I added cooked rice and chopped cooked greens (I used poke greens).
When everything was well heated I tasted for seasoning. It needed more salt so I added more chicken style seasoning and fermented bean paste.
At the very last I added fresh parsley, and it was ready to eat.
