Black Beans Brown Rice & Beet Greens Patties

Evidently when I thought I harvested all the beets last fall I missed one, or perhaps I left one  behind because it was too small to bother with. Well, over the winter it grew and grew and grew. I’ve had my eye on the healthy looking greens for awhile now and finally decided it was time to use them.

I cooked the greens and used them to make black bean and brown rice patties. Ingredients for the patties were:

  • cooked beet greens
  • refried black beans
  • brown rice flour
  • chopped onion
  • cumin powder
  • chili powder
  • garlic powder
  • salt
  • bread crumbs

The patties were cooked in a skillet greased with olive oil and served with sliced tomatoes on a bed of arugula.

Faye loathes the very thought of salad for breakfast, but sometimes I am able to slip little bits of salad onto the breakfast table with no mention or objection.

    1. Black beans, sometimes called black turtle beans or Cuban black beans, are simply dry black beans which have been cooked and then mashed. I frequently cook the dry beans in a slow cooker after soaking them overnight. I just like having the packets or tinned version for when I’m in more of a hurry.

      1. The ingredients in the pouch of black refried beans are water, black beans, vegetable oil, salt, onion and garlic. When I make them myself I just mash with added water or tomato sauce and I add spices without any frying. I, myself, have wondered why they are called refried.
