Cauliflower & Quinoa Salad

Today we had a hearty and refreshing salad. It was packed with powerhouse nutrition. The ingredients were:

  • Quinoa – cooked and cooled
  • raw cauliflower – pulsed in the food processor to a grainy consistency
  • red cabbage
  • red bell pepper
  • radish
  • serrano pepper
  • spring onion
  • chives
  • dried goji berries
  • oil marinated sun-dried tomatoes
  • parsley
  • lemon balm herb
  • juice of a lime

To garnish:

  • arugula
  • tomatoes
  • brine marinated artichokes
  • roasted slivered almonds
  • lemon balm

      1. Tomatoes could be dried in a dehydrator or in a low temperature oven but wouldn’t technically be “sun-dried.” I doubt if there would be any significant difference in nutrition. I will probably go with the dehydrator method.
