I know I have succeeded when Faye uses the words, “really good,” when volunteering a comment about a dish I have made. As usual, she was right.
Onions were sautéed with a little olive oil, then the spinach and salt was added. All purpose flour was stirred into the pan and cooked for a minute or two before adding cultured buttermilk and a diced precooked potato. My homemade buttermilk is very thick so I mixed in some water too. I also threw in a little of the white sauce left over from the stuffed poblano pepper yesterday.
When the sauce started to thicken I added two eggs and popped the skillet in a 300ºF oven for a few minutes. When the eggs had partially set I removed the skillet from the oven, scattered shredded Asiago cheese on top and slipped it back in the oven for another minute. I had meant to season the spinach and potato sauce with nutmeg, so, as an afterthought I tossed the cheese with nutmeg before sprinkling it.
