Aubergine With Mango Pickle

For my second go at using my newly acquired Cuisinart® Oven Central® I roasted an eggplant (aubergine) seasoned with mango pickle. I sliced the aubergine “hasselback” style and introduced finely chopped mango pickle and the accompanying sauce (spices and oil) into the cuts. I used my homemade mango pickle which is considerably milder than store-bought.


I baked the eggplant in the Cuisinart® appliance at 400ºF for 45 minutes.


I am not an aubergine aficionado. When I was younger I absolutely despised eggplant, but now I tolerate it and continue to search for ways I might actually love it. I have come close a couple of times, and this dish wasn’t bad at all. I suppose there are foods with which I will always remain distant acquaintances and never close friends. Nothing wrong with that, but I am not giving up.
