When making the mushroom filling for the spinach crepes yesterday I set aside a few of the larger mushrooms to stuff later. For the stuffing I used:
- shredded paneer cheese
- parboiled and chopped spinach
- tomato powder
- chopped walnuts
- green mole (mole verde) powder
- chipotle Tex-Mex seasoning
Green mole consists largely of pumpkin seed meal as well as chilis and spices, however the package I have doesn’t list the ingredients.
The stuffed mushrooms were baked at 400ºF for about 12 minutes. I happened to use the Cuisinart® Oven Central® to bake them in.
I used also stuffed a couple jalapeños which I baked at 400ºF for 20 minutes.
