Even though I am not a vegan I will sometimes choose to make a dish vegan even though a dairy product could make a nice contribution. Such was the case with the tofu and yellow squash stir-fry we had today, but this time I kept it simple.
I sautéed onion, garlic and sweet yellow pepper to which I added yellow summer squash and tofu.
There was a small amount of fresh spinach on hand so I chopped and added that. The recent hail storm almost destroyed my basil plants but I found a few leaves to add to the pan. I also added my homemade “chicken” style seasoning.
As I mentioned earlier, feta cheese and/or a couple of eggs would have taken this dish to another level, but it was tasty and good just as it was.
