These stuffed mushrooms were full of flavor with just a few ingredients, and preparing them was as simple as simple gets. The filling consisted of onion, cooked greens and crumbled reduced fat blue cheese.
I sautéed chopped onion, then added chopped frozen greens. I used poke greens which I had cooked and frozen last year, but spinach would have worked just as well.
Since the greens were precooked it was just a matter of getting them thawed and heated before switching off the stove and adding the blue cheese.
The stuffed mushrooms were baked at 400ºF for 30 minutes. I happened to use the Cuisinart® Oven Central®.
I don’t imagine most people would consider this a breakfast item, but for us it was perfect.
