There is nothing spectacular or unusual about this dish. It’s just a regular potato / sweet potato hash. If there is anything different it is in the way it is prepared. I used the Cuisinart@ Oven Central®. It has become almost the most used appliance in the house.
I greased the cooking tray with nonstick spray and layered the bottom with onion. Then I added a layer of sweet yellow pepper and jalapeño.
Then came a layer of potatoes, followed by sweet potatoes, salt and pepper.
I chopped a veggie Italian sausage and added that on top.
This baked at 350ºF with top and bottom heat for 30 minutes. To make sure the onions on the bottom were caramelized I cranked the heat up to 425ºF for 5 more minutes.
I enjoyed my breakfast hash with bourbon barbecue sauce made by Faye.
