As hoped, the peaches we purchased last week ripened all at the same time. Last night I cut up and blended them, and stored the purée overnight in the refrigerator.
This morning I stirred into the peach purée a leftover portion of cream of coconut, a scant pint of heavy cream and generous glug of honey. This mixture churned in the ice cream freezer for almost an hour (much longer than anticipated).
The finished ice cream is delicious! The coconut flavor comes through without overpowering the peaches. The ice cream is plenty sweet but with a bit of tartness.
