We spent much of today driving to and from, and visiting Congaree National Park in South Carolina. But, before we left the house this morning I tried my hand at throwing together a carrot, cauliflower and cheddar soufflé for breakfast.
At Congaree National Park we walked the 2.4 mile boardwalk loop through the floodplain swampland. The lower sections of boardwalk are regularly covered with water. On a 92ºF day, we were grateful for the Bald Cypress trees, Water Tupelos and Loblolly Pines which kept us mostly in the shade. Pawpaws were a common understory tree but we only noticed one with fruit on it.
