Caramelized Peaches With Goat Cheese On Blueberry Waffles

I must post and run because it will be a busy day of canning peaches.

For breakfast this morning I got out some frozen blueberry waffles Faye had made earlier in the week. They reheated and crisped up nicely in the toaster.

I placed unpeeled halved peaches cut side down in the Cuisinart® Oven Central® with a little butter and cooked them at 400ºF with top and bottom heat. After several minutes with the lid closed I was able to easily lift off the peach skins with a fork.



When the peaches were soft I raised the lid and let them caramelize with just the bottom heat. Meanwhile I roasted chopped walnuts in a dry skillet and added goat cheese and cinnamon while the pan was still warm. The intent was to soften the cheese, but the pan was too warm, causing the cheese to curdle slightly. Only the consistency was affected and not the flavor.

The goat cheese and walnuts were spread on the toasted waffles which were then topped with the caramelized peaches.
