I think I have found my new favorite breakfast egg dish. It was made in the Cuisinart® Oven Central® but could have been made in a skillet with a lid.
I sautéed whole cumin seeds, red onions and jalapeño peppers with a little olive oil using bottom heat only (350ºF).
I then added fresh spinach on top of the onions.
On top of the spinach leaves I spread black beans and corn mixed with tomato paste and my Tex-Mex Chipotle Seasoning.
I then cracked two eggs on top of the black beans and corn mixture, closed the lid of the Oven Central and allowed it to cook at 350º with top and bottom heat.
When the egg whites had firmed up I sprinkled shredded Asiago cheese and chopped cilantro on top.
At this point I turned the heat off and closed the lid just to let the cheese melt. This was a most delicious breakfast if I have to say it myself!
