It’s been several days since my last post. There hasn’t been a lapse in creative activity in the kitchen, it’s just that out of sheer laziness I haven’t taken the time to mention recent events.
I’ve been on a toasted whole wheat taco kick lately and have been quite enjoying it. I like that the crisp toasted tortilla takes cooked vegetables to another level and turns them into food which can be eaten out of hand.
I had a craving for greens this morning and made a spinach and feta taco for myself. I started by toasting cumin seeds in a dry skillet for a minute or so. Then I added a little olive oil to sauté onion, jalapeño and sweet red pepper.
Next I added the roughly chopped spinach and covered the skillet. The spinach cooked down to not very much at all. Next time I will add a lot more.
I filled a folded whole wheat tortilla with the sautéed vegetables and crumbled feta cheese and toasted the taco in a dry skillet until crisp.
I enjoyed the taco so much I made a similar dish for the two of us for our next meal.
