Yellow crookneck is my favorite of the summer squashes. It has a mild buttery flavor that is good on its own and also goes well with eggs. Summer squash frittata is a frequent dish on our breakfast table in early summer. Any of the squashes will do, but yellow is my favorite.

- shredded feta
I baked it at 300ºF until set.
I enjoyed mine with probiotic salsa.
