Lasagna was somewhere in the back of my mind when I made this dish for lunch today. The sauce consisted of:
- tomato sauce
- tomato paste
- onion powder
- garlic powder
To the heated tomato sauce I added chopped mushrooms sautéed in a dry pan as well as onion, garlic and jalapeño sautéed with olive oil.
For the filling I heated a frozen meatless burger product and added to that chopped frozen spinach.
When the burger and spinach were thawed and nicely warmed I softened and mixed in goat cheese.
I softened yellow corn tortillas by zapping them in the microwave for ten seconds and filled them with the burger, spinach and goat cheese mixture. I laid the rolled tortillas in a bed of the mushroom tomato sauce and poured more of the sauce over them.
After baking for about 45 minutes at 400ºF I sprinkled the top with grated feta cheese.
