Jade Pearl Rice Salad With Mango, Peach & Pineapple

I cooked up some jade pearl rice for the first time. Not being familiar with it I, out of habit, began rinsing the rice. I noticed that the color was being released so I stopped rinsing and commenced cooking. Now, after the fact, I realize that the rice gets its color from being infused with a bamboo leaf extract (I purchase the rice in bulk so it didn’t come with instructions or other information). Oh well…

While the rice was cooking I cut up a mango, a peach, some fresh pineapple, red onion and a “coolapeño” pepper.

The cooked rice was then folded in with the chopped fruits and veggies. The flavor of the basil leaf garnish went well with the dish. I should have included more of it cut up in the salad.

  1. Sounds delicious Greg! I have not cooked with this rice before, so good to have that information. BTW,what is a coolapeno pepper? Sounds very interesting!
