Stir-Fried Nopalitos & Butternut Squash

This is the way I like to find butternut squash, mostly neck and a very small seed cavity:

I rubbed just enough coconut oil on the squash for the salt and chipotle Tex-Mex seasoning to stick and baked it in the Oven Central.

I reheated the stir-fried nopalitos (cactus, onion, garlic, jalapeño, cumin seeds) I made the other day and added coconut and garbanzo beans.

It was part of a simple but healthy meal.

  1. Reading your recipes is like learning a new language: I have little idea of what you are describing, but it looks stunning nevertheless! Napolitos, Chipotle, Tex-Mex seasoning? It’s often difficult for me to work out whether it’s vegan or not 😄

    1. I really should explain myself better. Nopal is Prickly Pear Cactus and nopalitos is cactus cut into little strips or pieces. If a word is highlighted in blue it is a link which will take you to another post which, hopefully will explain it further. This particular dish is vegan.
