Roasted sweet potatoes make a great addition to a Tex-Mex black bean type salad as the many examples out there attest. I had to put a quick lunch together and this is what I did:
Using the Cuisinart® Oven Central® I roasted sweet potato, halved purple pearl onions and roasted, pealed and chopped Hatch chiles.
To a can of drained and rinsed black beans I added canned corn, quartered grape tomatoes, halved stuffed green olives, roasted sweet potatoes, roasted pearl onions and roasted green chiles. For seasoning I used a mixture Faye put together last night which included chili powder, cumin, onion powder, garlic powder, oregano, smoked paprika, parsley, salt.
