Red Rice Upma

This morning I used precooked red rice to make upma. First I roasted seeds and spices in a skillet with coconut oil:

  • split chana dal
  • split urid dal
  • stick cinnamon
  • cardamom pods
  • cloves
  • mustard seeds
  • white poppy seeds
  • coriander seeds
  • cumin seeds
  • peanuts
  • cashews
  • curry leaves

Then I added the cooked red rice, golden raisins, peas and carrots (I used canned because I was pressed for time).

The red rice upma was served with Greek yogurt and a relish made of:

  • sweet onion
  • jalapeño
  • tomatoes
  • cilantro
  • lime juice
  • stevia
  • cumin powder
  • pink salt

  1. I have some uncooked black rice that I used once, but didn’t particularly care for. Would that work in this recipe, do you think? Or is the extra heavy and sticky consistency of the black rice too much for this dish? Presume could substitute another vegetable for the peas. I got Brussels sprouts yesterday – maybe they would work.

    1. No, I don’t think the black rice would work so well. I don’t care for black rice so much either and I have a bunch of it! Upma is typically made with semolina or cream of wheat and is made with a variety of vegetables or none at all.

    1. Thank you so much for your kind and generous comments! I don’t foresee a cookbook. I don’t do recipes well whether following or attempting to write. Hard as I try, before I know it I have failed to measure and have added ingredients not called for. I am terrible at documentation. My hope is really to inspire people to think outside the cookbook and the recipe.
