I love Indian food and prepare it often, usually from scratch, but I won’t hesitate to use a mix for the sake of time and convenience. This morning I used a mix to make uttapam.
Instead of scattering the vegetable ingredients on top of the pancake after spreading the batter in the pan I mixed them right into the batter. I added onion, carrot, spinach, red chili pepper, cilantro and chaat masala.
If there had been more time I would like to have put together a chutney to go with the uttapam. I enjoyed mine with Greek yogurt and homemade mango pickle.
