If you are one for whom Brussels sprouts are one of the most vile tasting vegetables on the planet, yet are sincere in your desire to eat wholesome foods for the sake of health and nutrition, you might want to take a risk and try eating them raw. They don’t taste anything like the cooked variety.
I made this slaw today with thinly sliced Brussels sprouts, shredded parsley root, thinly sliced sweet onion, dried goji berries and roasted chopped pistachios.
For the dressing I used white balsamic vinegar, ume plum vinegar, mirin, agave nectar, lime juice, olive oil and a small piece of salt preserved lemon peel finely minced. To mix the dressing I put all the ingredients into a small jar and shook it vigorously.
Also on the table were grilled tofu and cauliflower/spinach/goat cheese soup. I will mention the grilled tofu again in my next post.
