Potato Patties With Spinach & Fenugreek Leaves

Yesterday I made mashed potato balls with fenugreek leaves. They were good, and today I expounded on the idea and made something similar and even better.


It started with boiled potatoes lightly mashed and a little lumpy. To the potatoes I added:

  • chopped onion
  • chopped jalapeños
  • frozen fenugreek leaves
  • chopped curry leaves
  • chopped cilantro
  • chopped Indian hot green chillies
  • mango powder (amchur)
  • cumin seeds
  • ajwain seeds
  • kalonji seeds

The last three items were dry roasted and coarsely ground with coarse sea salt in a mortar and pestle. The thawed fenugreek leaves were salted with kosher salt and allowed to sit for a time, then they were squeezed dry and chopped.

To all of the above ingredients I added chopped fresh spinach and mixed it all together.

My intention was to bake this mixture in a muffin pan but time was short, so I made patties instead.

Other than potato nothing was added as a binder, but the patties held together well. They were delicious too. We both went back for seconds. I enjoyed mine with Greek yogurt and Amla Pickle.
