Quark Tart

The title is a little misleading; I just liked the sound of it.  Quark is just one of the ingredients.

I was late getting home from running errands and had less than an hour to put a meal on the table, not enough time to take health or nutrition into consideration. I just started throwing things together.

I started by cooking sliced mushrooms in a dry skillet until they stopped releasing moisture. When the pan dried up I drizzled olive oil onto the mushrooms and and added chopped onions.

When the onions had caramelized a bit I added chopped fresh spinach, turned the heat as low as it would go and covered the pan to wilt the spinach.

When the spinach had wilted I added roughly chopped Brie and covered the pan again to help soften the cheese.

After mixing in the softened Brie I turned off the heat and mixed in some quark from my most recent batch made from fat free milk.

At this point I realized I had neglected to purchase the number one item on my list: eggs. Fortunately I have plenty of powdered eggs.

I laid out pizza crust dough in an oval baking dish. You know, the rectangular kind that comes in a cardboard tube (just happened to have some on hand). I stuck it into the oven cold oven while it was heating up to 350ºF, breaking all the rules, I’m sure.

By the time the oven had come to temperature the dough was puffing up. I realized that maybe I should have pierced the dough, and did so before pouring in the filling.

This may not have been the healthiest meal but it sure was tasty. Now I feel the need to eat cucumbers and celery for the rest of the week.
