I was eager to try out my new tofu/paneer mold and press, so last night I made up a batch of paneer. It worked great, and this morning I unwrapped a nice brick of paneer, much nicer than the ill shaped blobs of cheese I’ve turned out in the past.
My favorite way to have paneer is with spinach (palak paneer). Sometimes I like to brown the cubes before adding them to the curry.
I love raita, and in my opinion an Indian influenced meal demands it. Unfortunately there wasn’t any yogurt in the house. There was some nonfat buttermilk which had a very thin consistency. By adding avocado, cilantro, onion, jalapeño, Thai red chili and cucumber it ended up about right.
I think I might be getting the hang of making dosa.
We enjoyed our palak paneer with rice, dosa, avocado / buttermilk raita, amla pickle and sweet mango pickle.
