Early this morning I charred and peeled a few poblano chili peppers for a recipe later today. I figured I could spare one of them to use with breakfast.
The ingredients for this breakfast fry were:
- roughly chopped onion
- sliced garlic
- quartered precooked baby potatoes
- quartered mushrooms
- roughly chopped charred and peeled poblano chili pepper
- kosher salt
- sprinkling of rosemary, thyme, tarragon & black pepper
- olive oil
Everything went into the pan at the same time and cooked at medium heat, turning only occasionally. Every once in a while I would shake the pan without tossing just to slide things around and make sure they weren’t sticking.
There was only one egg in the house so that went on Faye’s plate.
