Today was leftovers day. I realize the thought of someone else’s leftovers may not always be the most appealing, but having been intimately involved in every aspect of the food’s preparation and history I eagerly anticipated it. The fact is, some dishes develop the best flavor by spending the night in the refrigerator.
The red beans and brown rice were reheated in the microwave oven and wrapped in whole wheat tortillas. The burritos were toasted on four sides in a dry skillet without oil.
