Eggs, Potatoes & Mushrooms With Sage Derby Cheese

If you clicked on this post hoping to read about a delicious healthy breakfast you would only be half right, the correct half being that it was delicious. To not totally disappoint, let me show you a couple photos of my last meal which was indeed healthy (and delicious). Then, if you wish, you may be on your way­čśë. Avocado, cucumber and pickled pink onions on whole wheat bread:

Now on to my unhealthy fattening breakfast. I seasoned olive oil with powdered rosemary, thyme, onion powder, garlic powder and kosher salt. I brushed it onto halved pre-boiled baby potatoes and white mushrooms and placed them in Cuisinart Oven Central.

Faye asked me one time, “What’s in these eggs that makes them taste so good?!” The answer was, mayonnaise. I don’t often add mayo to eggs but occasionally I do. I beat the eggs, mayonnaise and salt with a fork, although they emulsify much better with a blender.

The mushrooms were getting soft so I removed them from the baking tray first, and when the potatoes were nicely browned on the cut side I removed them. I poured in the egg mixture and placed the potatoes in the eggs cut side up and the mushrooms stuffed with a chunk of Sage Derby cheese.

I will attempt to work off this indulgent breakfast toiling in the garden. Faye will have to decide how she wants to deal with it.
